Each Revive Our Hearts Conference provides for a box lunch on Saturday as part of your registration fee. Individual conferences may also provide snacks or a breakfast of some kind. The staff and management of the Gold Room, Starbucks Kiosk, the Oasis and the Lookout Bar and Grille will be familiar with the special dietary needs of individuals with celiac disease and dermatitis herpetiformis. To accommodate those attendees who are staying longer at the resort, the Lookout Bar and Grille and Gold Room will include gluten-free entrée items on their restaurant menus for at least the two days prior to the conference and the two days following.

All five flavors of our ExtendBar Delight formula are gluten-free. Our ExtendCrisps are made from gluten-free ingredients, but are not certified gluten-free because the manufacturing process for the Crisps hasn't been confirmed to adequately protect from gluten contamination from other products made at the facility. Our two flavors of ExtendBar Crunch not gluten-free, since they contain a very small amount of barley malt extract.

We serve three 3-course meals per day (salad/soup, entr?e, dessert). Snacks are served between meals and before bedtime (3 per day). Menu preparation as well as eating schedules are adapted to each resident- this means that if you're mother isn't an early-riser she doesn't have to wake up early for breakfast, and if she's diabetic then diabetic meals will be prepared accordingly. Pureed diets, if required, are also accommodated. Our priority is to best serve our resident's comfort and needs.

All of our snacks except for Stealth Chips, CHAOS, Honey Wheat Pretzels and Pirate's Pretzels are Gluten Free (There is a Gluten and Wheat free version of the Chaos). Since gluten is used on other snacks at the plant, we do not put it on our bags. They run our snacks first, thoroughly clean the machines between runs, and train all the employees on allergen control to reduce the possibility of cross contamination. However, we cannot 100% guarantee that there can never be a cross-contamination.

UCC provides breakfast, lunch and mid-morning and mid-afternoon snacks for the children in attendance during those meal-times. The Center participates in the Child and Adult Care Food Program (CACFP) sponsored by the USDA. The meals provided by UCC must meet the CACFP nutrition guidelines. Menus are posted in the parent information area in each building. Meals and snacks are served family-style at UCC. Infant needs are met on an individual basis.

All of our meals are provided by the college dining services. They offer a wide selection of nutritious foods and beverages and can accommodate special dietary concerns if we are notified in advance. During the sessions, we often have outdoor barbecues, picnics and ice cream sundae parties. Healthy snacks and drinks are provided during breaks.

A Gluten-Free Diet is the only treatment for Celiac Disease (CD) and/or Dermatitis Herpetiformis (DH). It is a life-long committed diet and should not be started before being properly diagnosed with CD/DH. When gluten is removed from the diet, the small intestine will start to heal and overall health improves. Medication is not normally required. Because osteoporosis is common and may be profound in patients with newly diagnosed CD, bone density should be measured at or shortly after diagnosis.

Although the exact cause of celiac disease is not known, having certain genes increases your risk. You are more likely to have these genes and may get celiac disease if you have a first-degree relative (mother, father, brother, sister, son, or daughter) with the condition. Environmental factors, such as viral or bacterial infections, may trigger changes in the small intestine in people with these genes; then, eating foods that contain gluten can trigger an abnormal immune system response.

A few patients have a poor clinical and/or histologic (biopsy) response to the diet. An important step in assessing patients who are non-responders is to confirm the diagnosis of celiac disease by review of the original biopsy, preferably by an expert gastrointestinal pathologist. However, the most common cause of a poor response is continued gluten ingestion, which may be intentional or unintentional.
