You're right, the "check all" feature on that address list popup only does the To line. But there is an easy way to do what you want. Create a new Group in your Address Book and then assign all your contacts (or just the ones you want to send to at the same time) to that group on the group edit screen. That group name will then appear in your contact list popup, and just check Bcc beside the name of the group. All addresses will then be entered automatically.
