Select the participant in the "Participant Name" column, and then select the "Edit"->"Delete Participant" menu. Please note that in version 3.0.16 delete was not working correctly, in some cases after deleting a participant from the list another participant would recieve themselves as a secret santa. In order to delete a friend, first open your Friends list if it is closed. Channels can not be deleted from the channel list, however it is possible to swap two channels using the 'Programme Sort' feature (Menu->Tuning->Programme Sort).
