Aging is a process that brings a deeper, richer flavor to beef and allows for it to be more tender than meat that is not aged. It enhances the flavor in cuts of meat that are well-marbled and have fat cover. When meat is being dry aged, carcasses are hung in a refrigerated, controlled environment. This process takes longer than wet aging. During the wet aging process, the meat and all of its juices are vacuum sealed in plastic.

Aging is critical to ensure you receive a tender product. Wet aging is done in a vacuum package to improve meat safety and eliminate the product's exposure to additional pathogens that can occur during a dry aging process. The meat is cut into sub-primal cuts and aged for an average of 28 days before portion cutting. Dry-Aged. Dry aging promotes robust beef flavor and refines tenderness. In Montana Legend’s aging process, beef is hung for 14 days prior to being hand cut into steaks, roasts, ribs, and steakburgers. Most commercial beef producers use wet aging, a process whereby carcasses are aged in a plastic bag. This is a poor substitute for dry aging.
