Red Book Audio refers to the technical standards that have been set by the audio industry for the physical production of CDs, such as the overall dimension of the CD, the size of the CD hole and how the audio is burned on to the CD. This is not determined by the PORTADISC but by the software application. The PORTADISC outputs 44.1k, 16-bit PCM data which is the same format as CD. You can save this data in whatever file format you choose, as long as the software application supports this. Common file types may include wav, aiff, SDII, etc.
