They are probably not getting enough water. Set a mister near the terrariums and allow students to mist the terrarium once or twice a day. Occasionally, I've seen a tank in an area that is very well lit and/or it receives direct sunlight. This can spawn excess growth of photosynthetic (zoozanthellae) cells in organisms like plants and algae. Certain algae strains can deplete oxygen levels, and clog up filters, amongst other problems. In the meantime, you can try the Kyoto spores available at many nurseries. You can get a tree that already has moss on it (hopefully, locally grown). You can try transplanting moss from other locations, such as a damp and shady spot on the other side of your house.
