In an upcoming release we'll be adding the ability to save all of your default compose preferences, but right now you can't. When you start a new message, it will always come up plain text by default for now. When replying to a message, the compose window opens up as HTML (Color and Graphics) when the message being replied to was HTML already. I am using webmail on Earthlink. I am also using a Mac OS-X10.
