I always advise people to try to stick within the 500 word limit. While I don't think most readers count the words, I do think complying with the instructions shows that you understand that the rules are there to be followed and that you are someone who will comply with instruction. I would suggest you have someone else read your essays. They may be able to make some recommendations about how to cut down your essays without losing important concepts that you want to convey.
