Sweet Thing can be used in cooking and baking. It measures equal to sugar (cup for cup) and acts like sugar with normal browning and caramelization. We are currently developing a Sweet Thing formula that will provide an optimal flavor in baking. At this time, when baking with Sweet Thing, we recommend reducing the amount of sugar by half in a recipe rather than replacing it altogether to achieve the best possible result in taste.

There are fire limitations in the National Parks and Wilderness areas. These limitations are usually based on elevation. In Yosemite, fires are prohibited above 9600ft, in Kings Canyon National Park, and the John Muir/Ansel Adams wilderness areas 10,000ft, and 11,200ft in Sequoia National Park. In addition there are several heavy use areas where fires are also prohibited. It is encouraged that hikers use stoves to cook.

Yes. You have to adjust not only the sugar but also fats (butters and oils). Typically, our chocolates contain more cocoa butter than most and if you don’t adjust for that, you end up with excess oil, and greasiness in the end product. Chocolove is excellent, however, for coatings and recipes that don’t require baking such as puddings, mousses, etc.

Yes, your meals are prepared in the safety of your own kitchen, although some personal chefs are moving to licensed kitchens and delivery service. Normally, on the agreed upon cooking date, I will bring the fresh ingredients for your meals along with his/her own pots, pans and utensils, and prepare your entrees on-site. At the end of the day I'll leave your kitchen clean and full of the aroma of good home cooking!

You are quite welcome to cook for yourselves if that is what you want to do, but our cooks are pretty good, so you might as well sit back and enjoy the sunsets ! We welcome visits to the kitchen by people with food allergies or guests who would like to teach our cook a new recipe. Try us with requests but it would help if you speak Indonesian otherwise you’ll have to work through one of our translators.

All of the huts that are open in the summer have metal fire pits with grates, except for Francie's Cabin. Colorado summers can be very dry and the US Forest Service will issue a fire ban when conditions become dangerous. It is your responsibility to find out in advance if there is a ban in effect. Forest Service Ranger District numbers are provided on the summer information sheet sent out with all summer reservations. 10th Mountain will occasionally close the fire pits at the huts.
