The first thing you do is to log feedback, pointing out that you are one of thousands of thousands of users who have problems with this, because Apple does not provide proper feedback in the user interface. Only some fonts contain italic (or oblique) typefaces. Experience has taught me to recommend you not to use formatting to produce italics, either when sending your profile to me, or posting to the list. Similarly, I would prefer you not to use circumflex to indicate long (doubled) vowels in Japanese. We hope to make a prototype of a Bold weight (and a few others, including italic) available soon, but it will only cover basic Latin glyphs at first. I try to make the text look like it's worth reading. There's nothing worse than looking at a big block of text that you don't want to read. I want people to read through everything I write, so I do my best to make the text look interesting from a design standpoint. Before the text you wish to bold, add "<strong>". After the text you wish to bold add "</strong>". Example: "<strong>I love to sing.</strong>" will appear as "I love to sing."
