The log viewer in the server administration dialog only views log files from the machine showing the dialog. So if you view the log while attached as a client to a server, you are viewing the client's log file - not the server's. To view the log from a different machine, you should run Sesame standalone (not client/server) on that machine. This ensures access rights to that machine through the operating system's security and passwords.
