Frequently Asked Questions

My wine turned to vinegar. Why?

UCan-Brew-It
When wine is fermenting we store it in a sealed container with an airlock on top. The airlock allows carbon dioxide gas to escape and stops nasty bugs from getting in. There is a particular bacteria carried by a very small fly that will turn your wine to vinegar. If the airlock is not kept full of steriliser fluid the fly will crawl through and contaminate your wine. The other cause is a failure to sterilise ALL equipment thouroughly before use. This can also let the bacteria get in.

How does alcohol cause these problems?

OASAS Fetal Alcohol Spectrum Disorders (FASD) - Frequently A...
Alcohol in the mother's blood crosses the placenta freely and enters the embryo or fetus through the umbilical cord. The exact mechanism(s) by which alcohol damages the fetus and critical times of exposure are not known; however, exposure during the first trimester results in the structural defects (i.e., facial changes) characteristic of FAS, whereas the growth and CNS disturbances could occur from alcohol use during any time in pregnancy. How does alcohol affect a person?

Frequently Asked Questions relating to Alcohol Abuse and Dep...
Alcohol affects every organ in the body. It is a central nervous system depressant that is rapidly absorbed from the stomach and small intestine into the bloodstream. Alcohol is metabolized in the liver by enzymes, however, the liver can only metabolize a small amount of alcohol at a time, leaving the excess alcohol to circulate throughout the body. The intensity of the effect of alcohol on the body is directly related to the amount consumed. See similar questions...

I cooked using red wine vinegar without certification. Is this a problem?

kkmu
Unless the vinegar has reliable certification, it is non-kosher. The utensils used in cooking with this vinegar must be kashered. Because the non-kosher hot food penetrates only a thin layer of the counter, it can be sanded down to take off a layer of Corian and it would be considered kosher. However, we suggest speaking with a kitchen contractor to see if such a project is feasible. See similar questions...

What is Wine (Grape) Alcohol?

Pharmco's Frequently Asked Questions
Wine Alcohol is also a specialty pure alcohol derived from grapes. It is only available in 190 proof. Wine Alcohol is used by formulators in the natural products industry and is the product of choice with formulators of natural oils with no perfume. It has a light, pleasant, fruity odor which does not interfere with the base odor of natural oils in the formulated product. This is in contrast to the more "medicinal" odor of pure grain and synthetic alcohol. See similar questions...

How Long Does Vinegar Last?

The Vinegar Institute - Frequently Asked Questions
The Vinegar Institute conducted studies to find out and confirmed that vinegar’s shelf life is almost indefinite. Because of its acid nature, vinegar is self-preserving and does not need refrigeration. White distilled vinegar will remain virtually unchanged over an extended period of time. And, while some changes can be observed in other types of vinegars, such as color changes or the development of a haze or sediment, this is only an aesthetic change. See similar questions...

What about alcohol?

NIDA Drugs of Abuse and Related Topics - Frequently Asked Qu...
Alcohol is a drug, and its use is a serious problem among young people. However, alcohol does not remain in the blood long enough for most tests to detect recent use. Breathalyzers and oral fluid tests can detect current use. Adolescents with substance abuse problems are often polydrug users (they use more than one drug) so identifying a problem with an illicit or prescription drug may also suggest an alcohol problem. What does air do to wine? How long should a wine "breathe"?

Frequently Asked Questions
Wine exposed to air via a loose or nonexistent cork spoils basically because the fruit components oxidize. Oxidation, as you probably know more than I (it's been 30+ years since I took a chemistry course), involves a chemical reaction where oxygen molecules attach to certain other large and, in this case, organic molecules. Oxidation occurs VERY GRADUALLY when a new wine is maturing in cask as well as in the bottle as a wine ages. See similar questions...

How long does the wine last? Does it get better with age?

Wine The Experience - Faq
The shelf life of our wines should be between 3-5 years, and that partly depends on how you store it. Though as most of our regulars will tell you, it never makes it that far! (It’s too easy and too much fun to enjoy!) Our wines are delicious when you bottle them, but yes, they certainly do improve with a little ageing. The process of ageing and maturity in a wine is often shrouded in a vague mystique, but there is substance to it. See similar questions...
