The Food Chemicals Codex (FCC) regulates enzymes. The FCC is published by the National Academy Press, which is funded by the Food and Drug Administration (FDA) through the Food and Nutrition Board of the National Research Council. The FCC establishes the standards for food and food substances used in food processing. It is the only national standard for the evaluation of fungal enzymes. Not all enzyme manufacturers use FCC units and are not required to do so by law.
