There are actually two graphical user interfaces, gnunet-gtk and gnunet-qt. Note that both of these need to be downloaded separately. The GUIs supports searching, downloading and inserting files.

Actually there are two versions of the uil compiler around: one is built as uil while the other executable is named newuil. The latter uses libUil as opposed to the older one which uses it's own code base.

The user interface text is put into pages in the special MediaWiki namespace. When logged in as a sysop, you can edit those pages to immediately change the output of the wiki. Some configuration changes (like changing $wgSitename to set the wiki's name) don't affect the pages which were generated at install time.
