Oxidation, as you probably know more than I (it's been 30+ years since I took a chemistry course), involves a chemical reaction where oxygen molecules attach to certain other large and, in this case, organic molecules. Oxidation occurs VERY GRADUALLY when a new wine is maturing in cask as well as in the bottle as a wine ages.
