If a PDF document contains text, as opposed to an image, you can select text and do a normal copy and paste. Using the Acrobat Reader, one can select no more than a page at a time.

Adobe Acrobat can be used to convert any document to Adobe Portable Document Format (PDF). In most programs, you can use the "Print" command and choose "Adobe PDF" as the printer to use. Yes you can. To do this, start by clicking on the thumbnail image in order to enlarge it to its full size. Then, (if you are using Windows) right mouse click on the image and click copy.
