Coffee tastes best if consumed 7-10 days after it was roasted. However, our coffee is packaged immediately after roasting in heat sealed foil bags with one-way degassing valves. This allows carbon dioxide to escape, but does not allow oxygen in (exposure to oxygen is what causes coffee to stale). This type of packaging will keep coffee fresh until you open the bag, even if that is weeks from the time you purchased it. After opening, use the ziplock feature to keep it fresh. Coffee is freshest and will taste the best if brewed within two weeks of being roasted. Although coffee can still be brewed a month or two after being roasted it will not have same brightness and clean taste as when it is first roasted. In temperatures below 40 degrees all fresh decorations will last for many weeks or months. Temperatures above 45 degrees or placement in the sun will cause the fresh greens to dry out faster depending on the temperature. Indoors, the fresh greens will begin to dry in about a week. Immediately after roasting, Roast A Bean recommends waiting until the beans have cooled and degassed for at least 4 hours. Flavor will begin to decline after about 10 days, so only roast what you will use in that time. Green coffee beans will last for around two years without any noticeable loss of flavor.
