It will take a few weeks or months of training to get your muscles in shape, but you can do it. They may pull ahead on uphill climbs, but you will fly past them on the downhill. The road in Mauritania could be brand new by the time we get there, but presently it is well surfaced for the most part and pot-holed further south.
