Why do the recipes call for onions and peppers from the freezer?

FAQ for Menus 4 Moms
The same principle of bulk cooking can be applied to onions and green peppers either individually or together. If your recipe calls for a sauteed onion, instead of sauteing one onion, buy a whole bag of onions, chop them all and freeze in casserole-sized servings. When you have these meal-sized portions of meat and vegetables, it is a cinch to throw together a quick meal late in the afternoon. If you are just starting Menus 4 Moms, you will not have sauteed onions in your freezer. See similar questions...

How can you tell when jalapeno peppers are mature?

Sandlot Chiles And Stuff
Jalapeno peppers are edible and flavorful at all stages of their growth. However, a connoisseur of jalapeno peppers can distinguish a definite flavor difference between a fully mature jalapeno and one harvested early. A fully mature jalapeno pepper, regardless of size, generally exhibits small cracks around the shoulders of the fruit. Often a darkened area on the fruit indicates maturity and the initial stages of a color change in the fruit. See similar questions...

How about those Peter Peppers? They are incredible, huh?

FAQ
Thin skinned varieties dry best. You need to be careful with thick skinned, fleshy varieties such as the Jalapeno or Cherry pepper due to the high moisture content. They can be dried with a food dehydrator. If you don't have one you can try dicing up very tiny and putting in direct sunlight. Don't let them get wet or moist because they will get moldy. Why are chile peppers so hot?

Pepper FAQs
The compound capsaicin (cap-SAY-a-sin) is what causes the burning sensation. Capsaicin is mainly concentrated in the white pithy ribs inside the pepper, but a good amount can also be found in the seeds. Since they are indigestable by the human stomach and intestines, seeds can sometimes cause some discomfort the next morning when they're, ahem, passed from the body. See similar questions...

If you plant hot peppers beside sweet peppers, will the sweet pepper plant produce hot fruit?

Sandlot Chiles And Stuff
Absolutely not. Pepper flowers are self-pollinated, although occasionally cross-pollinate. However, the result of this crossing will appear only if seed is saved from this year's crop and planted next year. It will not result in off-flavor or differences in fruit characteristics of this year's crop. Yes, although this is not a recommended practice. In the northern parts of the state spring-planted pepper plants can often be carried through to first killing frost without pruning. See similar questions...

Yes . . . sort of. North of the equator chile peppers spin in a clockwise direction at approximate speeds of between 0.7 to 0.8 rpm depending on the temperature of the pan. South of the equator they spin counter-clockwise. At the equator itself they don't spin at all, but merely hop around the pan. See similar questions...

VIVA!
Believe it or not, that's pretty much up to you. You have a few options: you can pick it green when it is the size that suits your need, or the longer you leave it the sweeter (and redder). The lilac is the same though they are pretty sweet already when they get lilac colored. See similar questions...

I have a ton of your Jalapeno peppers and want to put them up in bottles. Any advice?

FAQ
I recycle bottles that I save from other stuff that has a plastic seal at the top...like mayonnaise jars, pickle jars, etc. I like a mixture of 2/3 distilled white vinegar and water. I add 1 tsp. of salt and 1/2 tsp. of turmeric as an added preservative. That is the basic recipe. When I want to get fancy I'll add a few cloves of garlic and bay leaves. Also, picking spice gives it a lot of extra flavor. Experiment and have some fun with it. See similar questions...

Is there any way to get my peppers hotter? I read that they are hottest in a drought. True?

FAQ
A drought won't do it. What it will do is hasten ripening because when a Pepper plant is stressed it goes into a survival mode and ripens some peppers fast...although they may be puny...so the seed matures and the plant is assured of reproduction. The major factor in Heat Levels in Hot Peppers is genetics. If the parent plant bore Hot Chiles, the offspring is very likely to do so also, providing the plant didn't cross-pollinate. Heat levels are tricky.. See similar questions...
