Ice crystals occur naturally on frozen products; however, excessive crystals - creating a snowy appearance - can indicate the storage temperature fluctuated.

Inadequate draining of vegetables before freezing, slow freezing or fluctuation of storage temperatures above 0°F may cause undesirable formation of large and excessive ice crystals. This can affect the texture as well as appearance of frozen vegetables.

This can be caused by a sudden drop in temperature or humidity level. When this occurs, some of the trapped moisture will leach back into the air leaving a crystal-like formation. These will liquefy once the humidity level increases. If you don't want to wait, simply pour water on them until they liquefy.

To see why snowflakes look like they do, consider the life history of a single snow crystal, as shown in the diagram at right. (Click on the picture for a larger view.) The story begins up in a cloud, when a minute cloud droplet first freezes into a tiny particle of ice.
