Why should I use the parking brake?

Most people still refer to this as the "emergency brake". It is used for that purpose in the event that you should lose hydraulic brake capability. However, under normal circumstance the parking brake is designed to hold the vehicle in place when the vehicle is in the "park" position. It allows the weight of the vehicle to be displaced or held in check by the rear brake shoes or pads. This in turn takes the pressure off the parking gear inside the transmission.

What brake fluid should I use?

Check the manual. Most older VWs use DOT 3. The newer ones use DOT 4 or Super DOT 4 (higher boiling point). Castrol makes one which is both DOT 3 and 4 compatible with a very high boiling point. The only place I have found Super DOT 4 in the US is at the VW dealer. One of the dealerships here also recommends Wagner as an aftermarket DOT 4 oil. Most people can change to better pads and they are good to go. OEM manufacturers tend to make their pads last longer, rather than give them great gripping power which results in faster pad wear and brake dust. Switching to a performance pad will generally make a difference. The idea is that rubber brake lines will flex under pressure and high heat transmitted from the brakes.
